In BE (I'm not sure about AE) we use all the forms you suggest.

I don't care - is a statement "I do not care". For instance "I don't care whether it is raining, I am still taking my dog for a walk."

What do I care - is, as Copyright says, a dismissive form, stating that the speaker does not care. For instance, my 12 year old son (typicallywhy/what do I care... (2)) doesn't like to tidy his bedroom. I will say to him "your bedroom is a mess", to which he'll often reply "So, what do I care...".

Why do I care - is a question. For instance, "Why do I care so much about what she thinks of me?"

However, "Why should I care" can be used in both ways.

Either in the same way as "what do I care". A rhetorical question that indicates that the speaker does not care. For instance: "Why should I care what you think of my car?"

Alternatively as a less aggressive question that is seeking an answer, for instance "I don't understand why I am upset. Why should I care so much about someone I hardly know?"
