you can use a lot of channels.

heli - 3 channels for collective and cyclics, 1 for yaw, 1 for power setting = 5, +1 for gyro gain, +1 for governer, 7 channels in a reasonably typical heli installation. can add 1 for remote glow, or 2 for choke/ignition cut, can add 1 for retracts, can add very many for scale details, wouldn't be unheard of to use 9-10 channels, +doodads.

sailplanes - 2 channels in the tail, 4-8 in the wings (usually 4), 6 channels is a relatively typical glider setup. add 1 if you have a motor or tow release, add 1 more for retracts on a scale ship, a scale motorglider with a 6 servo wing and retracts would run 10 channels relatively easily, even more if you have doodads.

50cc gas models can be set up various ways, let's say you have 2 servos on each aileron, 1 on each elevator, 2 on the rudder, 1 for throttle; if you have each servo on it's own channel, you're at 9, then add one more channel for any of: choke, ignition cut, smoke. can reasonably fill 12, even more with doodads.

there's a great deal of variability, you can vary how many channels you use by different mechanical setups, onboard electronics like matchboxes etc.

The salient point of discussion for radios is rarely the number of channels they provide.
