What Is Fathead Pizza?

Fathead pizza is pizza that uses a keto pizza crust made from mozzarella cheese, cream cheese, egg, and either almond flour or coconut flour. This combination creates an incredible texture that very closely resembles a wheat pizza dough.

How To Make Fathead Pizza Dough

Making this dough is different from a traditional wheat version, but it’s not difficult. It just takes some practice. Here is how to make fathead pizza dough:

  • Melt cheese. In a large bowl, combine mozzarella cheese and cream cheese. Microwave for 90 seconds, stirring half way through, and stir after heating, until well incorporated.
  • Finish fathead pizza dough. Add the Wholesome Yum Almond Flour and eggs to melted cheese. Knead the dough with your hands until a dough forms.

TIP #1: If the dough becomes hard to work with, microwave for 10-15 seconds to soften it. Do not overheat – you don’t want to cook it.

TIP #2: If the dough is very sticky, chill it in the fridge and oil your hands when ready. Both of these steps will make it easier to work with.

How To Make Keto Deep Dish Pizza

Once you have the dough, this keto friendly pizza is a breeze:

  • Form deep dish fathead pizza crust. Press the dough into a springform pan, and spread it over the pan, pressing the dough up the sides.

  • Add string cheese for stuffed crust. Place the mozzarella cheese halves along the edge of the dough and fold over to cover, pressing down the edges. Poke holes along the bottom of the crust, using a fork or toothpick.

  • Bake. Poke holes in any spots where bubbles form and return to bake until golden brown.

Pizza Dough:

  • 2 cups Mozzarella cheese (shredded)
  • 3 tbsp Cream cheese (cut into cubes)
  • 1 large Egg (beaten)
  • 1 1/3 cups Wholesome Yum Almond Flour
  • 4 whole Mozzarella cheese sticks (cut in half)

Pizza Toppings:

  • 1/2 cup Marinara sauce
  • 1 cup Mozzarella cheese (shredded)
  • 1/2 link Italian sausage (cooked and crumbled)
  • 10 slices Pepperoni

Instructions

  1. Preheat the oven to 425 degrees F (218 degrees C). Spray an 8-inch springform pan with cooking spray.

  2. In a large bowl, combine shredded mozzarella and cubed cream cheese. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well incorporated.

  3. Stir in the beaten eggs and Wholesome Yum Almond Flour. Knead with your hands until a dough forms. If the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.

  4. In the springform pan, press the dough with your hands to spread it over the pan. Press the sides up about 1/2-inch to 1-inch, enough to cover and fold over your string cheese.

  5. Add 7 of the mozzarella cheese halves along the edge of the dough and fold over to cover, pressing down the edges.

  6. Using a fork or toothpick, poke holes along the bottom of the crust to prevent bubbling.

  7. Bake crust for 6 minutes. Remove from oven and poke holes in any spots where bubbles form. Return to oven and bake for 3-7 more minutes, until golden brown.

  8. Add the marinara, shredded mozzarella cheese, sausage, and pepperoni to the crust and bake for an additional 7-10 minutes, until cheese has melted.

        Hi Erin, We don’t have separate nutrition info for the deep dish version, you’d have to enter the ingredients into an online calculator. Maya does have a standalone fathead pizza crust here, but it’s not deep dish.

      Hi Cassie, Yes, you can, but you might need a lower oven temperature to prevent burning the bottom and the cook time might vary. Also, it’s still best to line the bottom with parchment paper and grease the sides.
