I was born in the mid-70’s and grew up in the 80’s. There is a certain nostalgia of some of the family dinner recipes from that era. One of the most famous of these is the Impossible Cheeseburger Pie recipe that Bisquick started to put on the back of it’s boxes. To me, a Cheeseburger Pie sounds like the ultimate comfort food. And Bubba Pie is ALL ABOUT comfort food! So, we thought we’d share our own version of this classic recipe!

Who doesn’t love cheeseburgers? And if you can make a cheeseburger into a delicious casserole, you should definitely do it. We did just that thing last year when we shared our recipe for a Bacon Cheeseburger Tater Tot Casserole. Now it’s time for some Cheeseburger Pie!

Bisquick-The Ultimate Comfort Food Staple

Bisquick is a premade baking mix consisting of flour, shorting, baking powder and salt. It is a fantastic shortcut for all sorts of recipes, from desserts to main dishes. It is the star of one of our most popular recipes, The John Wayne Casserole. In fact, I don’t even think it is fair to call it a shortcut, it is just simple an awesome ingredient that you can use is so many tasty recipes!

Impossible Cheeseburger Pie Ingredients

This classic recipe has been around for decades. And just like so many other famous recipes (including that John Wayne Casserole mentioned above), there have been several variations on it. Everyone has sort of developed their own take on it. For our recipe, we keep it super simple like always. Here is what you’ll need.

  • Ground Beef – We advise to use lean ground beef in this recipe. The pie may get too greasy if you use a mixture with too much fat.
  • Chopped Onion – Any kind of onion will work, but we like a yellow onion that cooks up sweeter and balances this recipe out nicely.
  • Shredded Cheddar Cheese
  • 1 Cup Milk – It doesn’t really matter what kind of milk you use here, any should work just fine!
  • 1/2 Cup Bisquick
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 2 Eggs

Can You Freeze An Impossible Cheeseburger Pie?

Absolutely! This is a great recipe to make ahead of time and keep in the freezer if you need an easy meal during the week. Simple allow the Cheeseburger Pie to fully cool and then wrap in aluminum foil and put in a freezer bag. It’s always a good idea to write what it is on the foil and the date that you made it. I just take it out of the freezer the night before and throw it in the fridge to thaw out before I reheat it. It should be good for up to 3 months.

Notes and Variations

  • Use a pie plate with a lid. That way you can just keep your leftovers right in there. We love using this Pie Pan because it comes with a lid. Now you can just keep all your leftovers right in the pie pan and not worry about any aluminum foil!
  • Make sure you really drain the grease out of the skillet after you have browned the beef. You REALLY don’t want this recipe to turn out too greasy.
  • Don’t be afraid to try out different types of cheese! Add some spice with a Mexican blend of cheese, or sprinkle in some swiss cheese for a different taste.
  • This is one of those great “base recipes” that you can add things to if you’d like. Try adding some bell peppers, Ro-Tel Tomatoes, Corn, Bacon or sub an Onion Soup Mix for the dry spices.

In the oven covered with foil should be the best way.

I am wanting to double this. Should I bake longer?

    • Kathy says

Do you mean making two pies? You shouldn’t need to bake it any longer. Just keep an eye on it. You’ll know that it’s done with edges start to brown a bit and the center is firm.

        • Kathy says

Yes. If the top starts browning too much before it is done, you can place some aluminum foil over it.

I made this using taco seasoning which was good, but it left an aftertaste. I will try it again using simple herb to see if I like it better.

I’ve made your version 4 times the past few months, then I put my spin on it for breakfast with sausage. I left out the onions and increased the eggs to 3. Delicious!!!

I made this for years and years! I was a single mom and time was tight on game nights. I used to make it the night before my son’s baseball games or practices and we’d have leftovers on game night. This way I didn’t have to come home and cook. He ALWAYS loved this for dinner! 🙂

Do you think I could double the bisquick mixture if I wanted it to be a little more pie-y?

    Reply

    • Kathy says

I haven’t tried it, I would think it would be more bread like if you did that. I feel like this recipe is pretty classic and feels like a pie the way it is written.

I love this recipe, but it takes longer than 25 minutes, everything else browns but the middle is liquid, any suggestions

    • Kathy says

Do you have your rack set in the middle of your oven? You can always cover it with some aluminum foil to prevent browning until the last 10 minutes.

My mom made this for our family growing up and I still love it! I’ve tweaked it a little over the years….I now add Chicago seasoning and Worcestershire sauce to the meat while browning, and then mix in cut up cooked bacon (or packaged bacon bits) to make it a bacon cheeseburger pie! My mom used to add sliced tomatoes to the top before adding the cheese, but I’m not a fan of tomatoes, so I skip that part.
It freezes well, so I usually put some slices wrapped individually in the freezer to pull out for lunches I can grab easily for work.
